The story
On a quiet street in Lyon's 7th arrondissement, Bergamote is the realisation of a lifelong dream. This is the restaurant of chef Maxime Pujol, a Lyonnais who knew since childhood that he wanted to cook. With his partner Colyne Chirouze in the dining room, he offers modern cuisine that is both honest and inventive.
Maxime Pujol grew up in Lyon, learning the value of the land and the sea during holidays with his grandparents. After a professional culinary degree at Lycée Hélène Boucher, he trained at some of the city’s finest addresses: La Cour des Loges, the Bocuse group, and Le Gourmet de Sèze, where he became second. A stint with chef Jérémy Galvan gave him the confidence to open his own place and finally cook his own food.
At Bergamote, the kitchen is driven by the rhythms of nature. Pujol works with small local producers who share his values, crafting dishes that surprise with bold combinations, precise cooking, and an unapologetic love of flavour. The restaurant describes itself as "bistronomique" – a style that balances refined technique with a relaxed, welcoming spirit. Each plate reflects the season, and the wine list, curated by Chirouze, complements the menu with care.
In 2026, the Michelin guide awarded Bergamote a Bib Gourmand, a mark of "good quality, good value cooking." It’s a fitting acknowledgement of a restaurant where generous, creative modern cuisine is accessible without pretension. The dining room is airy, with outdoor seating for warmer months, and the service is attentive but unassuming. Lunch is served Monday to Friday, dinner from Wednesday to Friday – closed on weekends, so plan accordingly.
