The Kitchen and Its Creators

At Bouiboui in Saint-Malo, Chef Bô channels years of street food experience into a focused Cambodian kitchen. Founders Anne and Bô By migrated their culinary practice from Cambodia through Phnom Penh street stalls before planting roots on the French coast. Bô refined his technique during tenure at Le Coquillage, yet he keeps the approach grounded rather than overly academic. The Fooding guide recently listed the spot after recognizing how well those street food roots translate to a refined daily menu.

Dishes That Shift with the Market

The menu changes daily because the team sources whatever arrives at local stands that morning. You might encounter a chilled broth infused with makrut lime and purple shiso, or a wheat noodle salad tangled with kimchi and Thai basil. Eggplant appears glossed in a light coffee foam, while desserts often feature peaches resting on coconut caramel alongside sticky rice. These plates demonstrate how contemporary Asian cooking can remain deeply rooted in traditional seasoning methods.

A Bright Room for Counter Dining

Twelve guests gather around the service counter where the daily rotation takes shape. Sunlight floods the room through expansive glass panels, illuminating brightly painted shelves and hanging potted plants. The layout encourages conversation while staff prepare takeaway orders for the evening window. Patrons typically order a single composed plate alongside a cup of coffee or a homemade citron miel.

At the wheel of their Foodie Bus, Anne and Bô By crisscrossed Cambodia in search of local specialties and home-style dishes, which they first unleashed on the streets of Phnom Penh… and now Saint-Malo! Behind the counter of this sunny eatery – all vast picture windows, primary-colored shelves and trailing greenery – Bô stirs Khmer culinary secrets with a spice-led philosophy (honed at Le Coquillage in Saint-Méloir-des-Ondes), with the day’s market produce calling the shots. The other lunchtime, after eyeing our neighbor’s “king” of Khmer sandwiches (a half-baguette crammed with carrot, sweet-and-sour cucumber, coriander, a flicker of chili and marinated pork), we zoomed in on our own spread: a bowl of chilled makrut lime broth shimmering with tomatoes, citrusy tapioca pearls and purple shiso; a wheat noodle salad tangled with kimchi, fried shallots and Thai basil, plus eggplant glossed in a foamy coffee emulsion; finishing with sticky rice crowned with peach quarters slathered in coconut caramel – outrageously good, spoon-licking stuff. · Scotty Lard
