The story
Brutal is the story of three longtime friends, each a passionate cook, who decided to open a restaurant that honors local ingredients in a way that is both refined and honest. They named it Brutal as a nod to the raw, unvarnished character of the products they wanted to showcase. The result is a place where friendship, precise cooking, and the robust flavors of the terroir come together effortlessly.
At the stove is Chef Alban, a Lyonnais who grew up surrounded by creativity—his parents were musicians. After culinary school, he trained with Michelin-starred chefs at Tetedoie and with Christophe Roure. His dream was always to open his own restaurant, and here he channels that training into a modern cuisine that stays true to its roots. He is supported by Stéphanie, a seasoned head server with seven years of experience, and Camilla, a Colombian-born second chef who brings a wealth of influences from her time in a Franco-Japanese kitchen.
The cooking at Brutal is described as "brut et authentique"—simple in appearance, balanced in execution. A recent menu included dishes like artichoke with ravigote sauce and parsley, a chicken thigh taco with sumac yogurt and mustard seeds, and a mille-feuille of apples with raw cream and buckwheat puffs. Each plate reflects the direct link between the restaurant and its local producers.
Brutal’s honest, ingredient-driven approach has earned it a place in the Michelin guide as a Recommended restaurant, a fitting recognition for a kitchen that lets the quality of its produce speak for itself.
