The story
Chef Joseph Viola, a Meilleur Ouvrier de France, runs three bouchons in Lyon under the name Daniel & Denise. The Croix-Rousse location, opened in 2015, is the newest of them. The restaurant was fully renovated to bring even more comfort to diners. It has been recognized by the Michelin Guide with a Bib Gourmand, a nod to the quality and value of the cooking.
Viola’s story is rooted in Lyon’s culinary traditions. After training with Michel Guérard and a decade at Léon de Lyon, he became a Meilleur Ouvrier de France in 2004. That same year, he and his wife Françoise took over the original Daniel & Denise on rue de Créqui from chef Daniel Léron. The couple expanded to Saint-Jean in 2012 and then to the Croix-Rousse in 2015. The restaurant sits in a neighbourhood that is historically home to the canuts, the silk weavers who started the tradition of the mâchon — a hearty morning snack that evolved into the Lyonnaise bouchon.
The kitchen focuses on the classic dishes of French and Lyonnaise cuisine. The menu includes a pâté en croûte with duck foie gras and veal sweetbread that was named world champion in 2009. Other staples are quenelle de brochet sauce Nantua, omelette du curé aux écrevisses, tête de veau with ravigote sauce, and Bresse chicken with morels and cream. Desserts include tarte tatin with praline de Saint-Genix. The cooking is described as lively, comforting, and centred on the product itself.
The atmosphere is convivial. Françoise Viola runs the dining room while Joseph is in the kitchen, a duo that combines tradition and elegance with generosity and simplicity. The restaurant is a member of the Association des Bouchons Lyonnais and the Toques Blanches Lyonnaises.
