In the heart of Lyon’s historic Vieux Lyon district, Daniel et Denise Saint-Jean is a bouchon gastronomique that embodies the spirit of Lyonnaise cuisine. Chef Joseph Viola, a Meilleur Ouvrier de France, runs this welcoming restaurant with his wife Françoise, continuing a tradition that began with founder Daniel Léron in 1968. The restaurant is one of three Daniel & Denise addresses in Lyon, all recognized with a Bib Gourmand by the Michelin Guide for their excellent value and quality.
Viola’s cuisine is what he calls “cuisine canaille” — a hearty, convivial style rooted in the classic dishes of the region. The menu features timeless Lyonnaise specialties such as pâté en croûte with duck foie gras and veal sweetbreads (awarded world champion in 2009), quenelle of pike with Nantua sauce, Bresse chicken with morels and cream, and the iconic tarte tatin with Saint-Genix praline. The story of Daniel et Denise is one of mentorship and passion. Daniel Léron, himself a Meilleur Ouvrier de France, spotted Joseph Viola’s talent and later coached him to earn the same prestigious title in 2004. That same year, Viola and Françoise took over the original Créqui location, and in 2012 they opened the Saint-Jean address, bringing their vision of a modern yet traditional bouchon to a new neighborhood.
