The rotating kitchen concept

Jaja Bistro in Lyon earned its 2026 Le Fooding listing by reimagining the traditional bistro format through a rotating chef program. Founders Antoine Kochen and Chloé Courbière launched this experimental model after building a reputation at their adjacent wine shop. Australian cooks Eliott Vials and Nathan Fallowfield currently manage the pass until late July. Their tenure introduces international techniques to a fundamentally French cooking framework.

Seasonal plates and global techniques

The current menu pairs regional produce with deliberate flavor combinations drawn from the visiting chefs’ backgrounds. Flat beans and fresh peas rest beside creamy ricotta, barbecued peaches, mint, and cilantro. Flank steak follows with a tare dipping sauce enriched by tahini and shiso leaves, while grilled eggplant and octopus carry sunflower seed butter, XO sauce, lovage, and black garlic respectively. A cheese selection from MOF Hervé Mons rounds out the savory progression, leading to strawberries served with raw cream and sorrel granita.

The dining room and terrace

Polished marble tables and classic bistro chairs anchor the interior layout. Engraved glassware catches the light during long summer evenings when guests frequently claim the outdoor terrace. The open floor plan mirrors the restaurant’s flexible culinary calendar. Visitors experience a relaxed pacing that keeps the changing kitchen leadership firmly in view.

Oh Jaja! After the success of their beautiful wine shop located on the other side of the Lyon peninsula, Antoine Kochen and Chloé Courbière, who recently partnered with Chloé de La Roche and Simon Verdannet, had the brilliant idea of lifting the curtain on Jaja Bistro (bistro chairs, marble tables, engraved glassware), a coolinary residence where they hand control of the kitchen over to chefs from around the globe, for cooking sessions with friends! From now until late July, Australians Eliott Vials and Nathan Fallowfield (ex-Garde Champêtre in Gyé-sur-Seine) will be shaking up the terrace, the latter of whom sent out all of the following the day we were there: flat beans and fresh peas nestled among a darling little mound of creamy ricotta, paired with barbecued peaches, mint and cilantro; flank steak with tare dipping sauce (a sort of sweet soy sauce) prepared with tahini and shiso; tender eggplant that was tossed on the barbie as well, covered in sunflower seed butter and a fiery XO sauce; along with some fabulous octopus given a green makeover with lovage and black garlic sauce… Before a lovely cheese course from the MOF cheesemonger Hervé Mons, followed by a few strawberries with some refreshing raw cream and sorrel granita.
