A setting shaped by history

On rue du Bât d’Argent in Lyon’s 1st arrondissement, a discreet door opens into a 16th-century Jesuit refectory. Thick stone walls, a vaulted ceiling, traces of old alcoves, and parquet floors flecked with colour set the stage. This is La Quintessence, where chef Anthony Baud has made his home since 2016.

The room itself is a surprise – an intimate, handcrafted space that feels both ancient and alive. It suits a chef who describes his cooking as “cuisine d’émotion”: direct, sincere, and built on excellent ingredients. Here, conviviality is not an afterthought but a resident presence.

A Lyonnais chef’s path

Anthony Baud grew up in Lyon, steeped in the city’s food culture. He trained with Jean-Claude Caro, then with MOF Christian Têtedoie, and refined his pastry skills at La Pyramide in Vienne. At twenty, he bought his own brasserie; three years later, he was ready for a larger canvas. La Quintessence became that canvas.

The chef’s approach is rooted in respect for product and technique. He works with short stocks, sauces, and broths that give structure without heaviness. In 2019, he was named Chef Espoir de l’Année at the Trophées de la Gastronomie et des Vins. He is a Maître Restaurateur and a member of the Toques Blanches Lyonnaises and the Collège Culinaire de France.

Cuisine that goes to the heart

La Quintessence offers a range of menus: a lunch menu, a vegetarian option, a four-course Découverte, and a seven-course Dégustation. The seasons dictate the ingredients; the chef’s sensibility sets the tone. His signature dishes are refined and confident, and the desserts are executed at a high level.

This is modern cuisine that honours Lyon’s traditions – the legacy of the Mères Lyonnaises – while interpreting them with freshness and clarity. The result is food that feels both grounded and surprising. The Michelin guide has recognised this quality with its Recommended distinction, a fitting nod to a kitchen that pursues refinement without pretence.
