The story

Le Grand Réfectoire: Modern Cuisine in Lyon's Historic Hôtel-Dieu

A Setting Steeped in History

Le Grand Réfectoire occupies the former refectory of the sisters within Lyon's Grand Hôtel-Dieu, a monument that has stood for over 250 years. Vaulted ceilings and a majestic stained-glass window set the stage for a meal that feels both grand and intimate. The space has been carefully preserved, retaining its original character while welcoming guests into what was once a silent witness to generations of Lyonnais life.

Chef Marcel Ravin's Vision

At the helm is chef Marcel Ravin, whose culinary identity draws on childhood memories "berced by a wind with scents of sugar and vanilla." His approach is described as universal, contemporary, and constantly evolving. He takes risks, innovates, and creates what the restaurant calls "an explosion in the mouth." This is modern cuisine that respects tradition but is not bound by it — a philosophy that earned Le Grand Réfectoire a Michelin Recommended distinction.

The Menu – A Modern Cuisine Journey

The menu changes with the seasons and the chef's inspiration. For lunch, the Menu Escapade offers a three-course option at €26, while the Menu Découverte (available at both lunch and dinner) expands the possibilities. In the evening, the five- or six-course Menu Collection showcases the kitchen's ambition. Standout dishes include the signature "L'Œuf de Marcel" — an egg preparation with truffle, manioc, and maracuja — which is also listed on the à la carte at €43. Other offerings range from a fricassée of poultry with morels and tamarin to a bar fillet with petits pois à la française and blaff sauce. The wine pairing, featuring Condrieu and Côte Rôtie from Domaine Duclaux, complements the meal.

A Space for Every Occasion

Beyond the main dining room, Le Grand Réfectoire offers several private spaces: the Caveau, the Lounge beneath the stained glass, and the Tables d'Hôtes within the open kitchen, where guests can dine alongside the brigade. The restaurant also hosts events such as jazz aperitifs and Sunday brunch. Whether for a business lunch, a celebratory dinner, or a private party, the setting and the modern cuisine create a memorable experience in the heart of Lyon.
