The story
Le Sully occupies a space with history. Before it was a bouchon, it was “Les Oliviers,” a bistrot run by Olivier Canal. Earlier still, it was the first kitchen of chef Mathieu Viannay, who later took the helm at the legendary Mère Brazier. Today, the restaurant is in the hands of Julien Gautier, chef of the neighbouring M Restaurant, and maître d’Emmanuel Tachon-Foley. They have given the place a fresh identity while honouring the traditions of the Lyonnaise bouchon.
The bouchon tradition dates back to the canuts – silk workers who gathered in convivial spots for simple, hearty food. Le Sully respects that heritage, offering a cuisine built on cochonnaille (pork charcuterie), local produce, and recipes that taste like childhood memories. The menu changes regularly, but classics such as quenelles, tablier de sapeur (breaded beef tripe), and saucisson brioché are staples. The evening Menu Lyonnais (€38) showcases the best of the region, and lunchtime brings a weekly seasonal menu. Lyonnaise cuisine is the star here, prepared with top-tier ingredients: charcuterie comes from the renowned Maison Sibilia (since 1925), and an excellent selection of Beaujolais and Côtes du Rhône wines accompanies every plate.
The dining room is warm and intimate, with a decor that is typical of the bouchon style – unpretentious, friendly. In warmer months, a shaded terrace opens from May to October. The service team, led by Djanie and head waiter Yacine, sets a relaxed, smiling tone. In the kitchen, cooks Kevin and Vincent turn out generous, savoury dishes. The Michelin Recommended award (2026) recognises the quality and consistency of this approach: Le Sully is a place where tradition meets genuine hospitality, without fuss.
Le Sully also offers takeaway – ideal for enjoying charcuterie boards or a full Lyonnaise meal at home. Groups can book private dining with tailored menus, and the restaurant is open for private events.
