Originally from Japan, Yo Miyazaki has spent years working in France and in Michelin-starred kitchens. His career includes stints at La Cime (Japan), Table Bruno Verjus (Paris), and Takao Takano (Lyon). At L'Étape Dorée, he brings that experience into a cuisine that is both exacting and sensitive. The cooking is modern French at heart, but lightened by a Japanese attention to detail – clean lines, restrained elegance, and a deep respect for the product.
