The story
In the Brotteaux district of Lyon, Miraflores is the expression of chef Carlos Camino’s singular vision: a culinary dialogue between France and Peru. The restaurant’s Michelin star recognizes this high-quality cooking, where the traditions and products that Pachamama (Mother Earth) offers are told through a singular story.
The gastronomic experience is a multi-stage journey that changes with the seasons. The chef, an artisan of nature, works with endemic Peruvian ingredients—herbs, cereals, corn, potatoes, and aji peppers (which do not necessarily bring heat)—to transport diners to Inca territory. Imported products are organic, a sustainable commitment that extends to most local ingredients. Dishes feature a predominance of fish, seasonal produce, and evocative items like huacatay, foie gras, pota, fine de claire oysters, Amazonian nuts, choclo corn, melano truffle, line-caught sea bass, and cacao blanco from Piura.
Two tasting menus guide the exploration. The Cuzco menu (90€) is a discovery of Peruvian traditions through an entrée, main course, and dessert. The Machu Picchu menu (165€) offers total immersion across Peru’s three territories: Costa, Sierra, and Selva, with dishes that might include Challans duck, aguaymanto, and coca leaf.
The wine program, led by a sommellerie team with a deep respect for the earth, favors biodynamic and natural wines from around the world, with a special focus on the work of women winemakers. A food and wine pairing is available for each menu.
Miraflores is not a restaurant for very young children, and reservations require a bank imprint (cancellation possible up to 48 hours in advance). Lunch is served on Fridays and Saturdays with the Cuzco menu. For a truly immersive Peruvian experience in Lyon, this is the address.
