The story
At Saisons, the seasons set the rhythm. This modern cuisine restaurant, located in Écully just west of Lyon, occupies the 19th-century Château du Parc du Vivier – built in 1882 by the Cottin family, prominent Lyonnais silk merchants. The setting is a grand house rich in history, where tradition and a contemporary spirit meet.
The story of Saisons began in the early 1990s, born alongside the Institut Lyfe (formerly Institut Paul Bocuse). It holds the distinction of being the first Michelin-starred training restaurant in France, a testament to its dual mission: delivering high-quality cooking while passing on knowledge to the next generation of chefs and hospitality professionals.
Under the direction of Chef Florian Pansin, the kitchen works with a network of dedicated producers and vintners. The menu changes with the harvest, offering tasting menus named after local estates – "Château du Vivier" and "Château de la Roseraie" – as well as an à la carte selection and a wine list that reflects the same care for terroir. Saisons has held its Michelin star for seven consecutive years, a mark of consistency and quiet excellence.
The restaurant welcomes guests for lunch and dinner from Monday to Friday, offering a refined yet unhurried experience that honours the French art of living.
