The story
Siprès is a bistronomique restaurant born from the collaboration of two craftsmen: chef Alexis Trimbour and pastry chef Alexis Hostiguian. Their complementary skills serve a cuisine that is entirely homemade and seasonal, from the first course to the last dessert. The restaurant’s name itself reflects this partnership.
The kitchen follows a philosophy of convivial, reasoned cooking. For lunch, a weekly changing menu offers a starter, main, and dessert shaped by the seasons and the chefs’ inspirations. In the evening, the carte leans toward Mediterranean and vegetable-driven dishes, paired with desserts that are both indulgent and creative. Every plate is made in-house, with an emphasis on fresh, local ingredients. This is modern cuisine that stays grounded in the seasons.
