The story
Growing up at the foot of Mount Fuji, Takao Takano learned to cook from the land. The family garden yielded bamboo shoots in spring, mushrooms in autumn – meals were simple, seasonal, and shared around a large table. That early sense of nature and conviviality never left him, even when he set aside law school for a French cookbook by Chef Mikuni. Today, in the heart of Lyon, he brings those two worlds together in a dining room that feels like an apartment.
The restaurant on rue Malesherbes is deliberately understated. A large bare door, low ceiling, shadows. Then the dining room opens in glass and light, with black, white, and grey warmed by wood. Takano designed it for twenty guests, serving them with the same spirit as if he were hosting three friends at home. The atmosphere is intimate, unhurried – a place for discovery and return to simplicity.
The cooking mirrors that philosophy. Takano describes his kitchen as “precision in chaos,” where ingredients are treated with reverence and allowed to speak. The product is king, he says – respected, cherished, adored. Herbs and aromatics cross borders freely, and the compositions change with the seasons and the chef’s intuition. The result is a cuisine that is both precise and alive, rooted in French technique but carrying the clarity of his Japanese upbringing.
Three menus map the experience. The Menu Envie (80€, lunch only, Tuesday to Friday) is a constantly shifting expression of the season, built on freshness. The Menu Essence (160€) is the condensed cheminement – a masterful summary of Takano’s journey. The Menu Partage (220€) pushes further, with ingredients and savoir-faire taken to their absolute. Each is a meditation on balance and purity.
The Michelin inspectors awarded two stars, recognising “excellent cooking” – a fitting tribute to a chef who transforms raw nature into something profound. In a city famous for its gastronomic heritage, Takao Takano offers a vision that is both personal and universal. It is the story of a Japanese chef who found his voice in France, and who continues to learn, to listen, and to share.
