The story
At Thomas in Lyon, chef Thomas Ponson cooks with a clear philosophy: authentic cuisine that respects the seasons and the products, with a particular attention to the wilder ingredients – game, mushrooms, and fish. This approach, recognized by the Michelin guide, is the foundation of every dish that leaves his kitchen.
The restaurant is part of a small family of concepts on rue Laurencin, each offering a different way to experience Ponson's cooking. At the restaurant itself, you can choose from a market-driven menu at lunch – two daily garnished dishes at 16 €, or a full formula – or opt for a more elaborate seasonal menu in the evening. The May/June 2026 menu, for example, features a starter of flamed mackerel with ajoblanco and sage oil, a main of farm chicken supreme with lemon and stuffed white asparagus, and a dessert of rhubarb and verbena in different textures. Every night, special dishes such as dry-aged rib beef, razor clams, and oysters are also offered, depending on arrivals.
The wine list reflects Ponson's personal taste for the Rhône Valley, where he comes from. Expect bottles from producers like J. Lionnet (Cornas), Despesse (Côte du Rhône), and Domaine de Pieblanc (Gigondas). The restaurant also offers a café, a bouchon Lyonnais, and a private dining space called La Réserve, making it possible to enjoy a glass of wine with tapas or oysters, a more traditional Lyonnais menu, or a full tasting experience – all within the same address.
