The story
Just steps from the Saône quays in central Mâcon, Cassis is the project of Célie and Aymeric, a duo who arrived in Saône-et-Loire with a clear vision: seasonal cooking, local produce, and a wine list built through personal encounters and curiosity. The restaurant has earned a Michelin Recommended distinction, a nod to the sincerity of their approach.
In the kitchen, Aymeric Buiron—originally from Foissiat in the Bresse region—draws on training in France and abroad. His cooking is described as sincere and straightforward, with homemade at its core. The menu changes with the seasons, highlighting local producers, responsible fishing, and conscientious breeders. Bread is 100% natural sourdough made from local organic flours. Four evenings a week, the evening menu is offered in four or seven sequences, with a wine pairing option. A lunch menu is also available, offering a more concise experience.
The dining room is a study in calm: stone walls, soft light, and a hushed atmosphere that invites lingering. Célie oversees the front of house with warmth and discretion, guiding guests through the wine list—which features growers from across France, with a strong focus on Burgundy—and offering thoughtful non-alcoholic pairings as well. The setting is convivial but unhurried, designed for ease.
