The story
Just outside Mâcon, La Huchette has been a destination for thoughtful hospitality for over sixty years. Yolande Gualdieri opened the restaurant in the late 1950s, and her table quickly became a regional reference, holding a Michelin star from 1969 to 1977. In 2018, chef Didier Goiffon and his wife Sandra – already at the helm of the Michelin-starred La Marelle – fell for the property and gave it a new lease on life. They reopened in May 2019, writing the next chapter of this family story.
Didier Goiffon is a son of the Bresse region. After hotel school in Thonon-les-Bains, he worked in some of France’s most respected kitchens: Oustau de Baumanière, the Hôtel de la Cloche in Dijon, and alongside Pierre Gagnaire when Gagnaire had just earned his third Michelin star. In 2006, his own restaurant La Marelle received a Michelin star, and Gault & Millau named him “Grand de Demain” in 2011. In 2019, he and Sandra turned their attention to La Huchette, where he now leads the kitchen with a modern cuisine that honors tradition.
The chef’s compositions change with the seasons, built on products from local farmers and artisans. Short supply chains guide the kitchen, bringing the flavors of Bresse, Beaujolais, and the Mâconnais to the plate. The result is a precise, unfussy modern cuisine that earned the restaurant a Michelin star – a recognition the house first saw decades ago.
La Huchette is also a three-star hotel, a characterful country house with cozy, timeless rooms. The dining room opens onto a terrace and garden, and the property regularly hosts art exhibitions by local artists. For those who cannot visit, the chef and his team also offer off-site catering.
