The story
In the village of Chaintré, just south of Mâcon, Sébastien and Floriane Grospellier run La Table de Chaintré, a stone house restaurant where the cooking is guided by the market and the seasons. The dining room, once the village épicerie, now offers a refined yet relaxed setting with an understated, warm décor.
Sébastien Grospellier is the chef. His style is described as authentic and sincere – a modern cuisine that lets ingredients speak. Each week, the menu is built around what he finds at the Lyon market and from trusted producers. A recent "Découverte du marché de Saison" menu included foie gras from the Landes, a fine shellfish gelée with Burgundy saffron and Kristal caviar, and a choice of Quercy lamb or veal from "élevé sous la mère" selection. The bread is made in-house with organic flour.
Floriane Grospellier runs the front of house, and her wine list is a serious affair: roughly 450 references, with a focus on biodynamic and natural wines from Burgundy and across France.
La Table de Chaintré holds a Michelin star, a recognition that matches the care taken in both the kitchen and the cellar. The restaurant also offers a takeaway service with seasonal, biodynamic menus packaged in biodegradable containers – a practical way to enjoy their cooking at home.
It is a straightforward, hospitable address in the Mâconnais wine region, rooted in the idea that good produce, prepared with skill and shared with warmth, is enough.
