A good steak requires effort, so you’ll have to take a few backroads to reach this old barn surrounded by pastures. Here you’ll find the Gersois family, diehard beef fans who raise Charolais cattle and preach the gospel of good meat. Seated under the impressive cathedral-like structure with jazzy tunes playing in the background, the other evening the menu tickled us pink: carpaccio of beef dry-aged for three weeks; a massive sirloin steak (or a sacrosanct prime rib) served with classic fries cooked to golden perfection in beef fat; along with some beautiful cuts served stuffed in Burgundy ravioli, as cromesquis or a tripe gratin with vegetables from the garden… // J.-N.M.
