The story
In the northern Aveyron countryside, a childhood dream has taken shape. Auprès d'Angèle is the realization of a personal vision: to recreate the warmth, serenity, and generosity of the chef's grandmother's home. The restaurant is named in homage to her—a "praise to grandma," to the women who shaped the chef's earliest memories of food and care. The house, set near the Cruou stream, is built on the same spirit of heartfelt hospitality that illuminated those childhood summers.
The kitchen is a dialogue between memory and the land. Chef Guillem takes charge of savory dishes, while pastry chef Zoé crafts the sweet courses, both guided by a philosophy of "cuisine de bon sens"—cooking that makes sense. They work with the market, letting the produce of the Aveyron lead: observing, smelling, touching, and tasting before bringing ingredients back to the kitchen to be peeled, grilled, seasoned, and assembled. The table setting is concise, accompanied by the "Liadou" developed by Nicolas, and the wine list honors the local vineyards, with a special focus on the historic Marcillac-Vallon appellation, alongside selections from the Causse Comtal, Rougier de Marcillac, Ségala de Conques, and the rare bottles of Côtes de Millau, Entraygues, and Estaing.
Beyond the dining room, Auprès d'Angèle is a true place to live. The guest rooms, reached by a sandstone staircase, are designed to feel like home—intimate, calming, and elegant, with careful attention to fine linens. The entire property is conceived as a space for sharing, where guests can discover the people, the cuisine, and the vineyards of this region.
