Paired in the kitchen with Louisa Van de Sand, Lucy Noël du Peyrat, and Thibault Martini, the former Ourea chef weaves together an Italian fusion at affordable prices: Giro-winning vitello tonnato, with its peloton of thin slices of raw veal in tuna sauce and its breakaway of capers; paccheri al ragù bianco with beef and veal simmered for a looooong time, creamy and delicately herbaceous, served with a sprinkling of pecorino cheese; followed by an erogenous chocolate ganache, olive oil, crushed Piedmont hazelnuts, and salt crystals.
