The story
On rue Sainte, in the Saint-Victor quarter a short walk from the Vieux-Port, Chef Edgar Bosquez has opened Ekume. A child of Panama, Bosquez trained at the Institut Paul Bocuse and refined his craft alongside some of France’s most celebrated chefs — including Paul Bocuse, Alain Senderens, and Gérald Passedat in Marseille. In 2022, he was named Jeune Talent by the Gault & Millau guide, and soon after he set out on his own.
At Ekume, Bosquez defines his cuisine with sincerity and simplicity. He is a partisan of reasoned production, respecting nature and its seasons. His cooking draws from two worlds: the marine life of the Mediterranean and the earthy treasures of Provence, filtered through the contrast of his Panamanian origins. The result is a personal, author’s table that feels both grounded and adventurous.
