The pink boudoir concept

Figure brings a refined approach to small plate dining in Marseille, opening its doors as an intimate venue defined by ornate powder pink walls and tailored lighting. Co founders Christophe Juville and former Le Grand Restaurant sous chef Rémi Hernandez originally intended to serve only fresh juices and botanical nectars. They soon pivoted toward carefully constructed menus after recognizing that guests wanted substantial accompaniments to balance those lighter options. This strategic shift earned them a spot on the 2026 Le Fooding list.

Flavor profiles and technique

This Marseille table encourages guests to share multiple courses throughout the evening while exploring contrasting flavor profiles. Guests encounter cheeky dauphine potatoes served alongside apricot sauce and herbed mayonnaise for a playful start. A marinated pepper rests over creamy stracciatella after receiving a careful mezcal smoke, then arrives with juicy peaches and toasted hazelnuts for added sweetness. The local kitchen consistently pairs seasonal produce with global influences, as seen in the charred sea bream dressed in ajo blanc.

At their ornate powder pink boudoir, foodie friends Christophe Juville (the boss of Spok and Lolo in Paris) and Rémi Hernandez (the former sous chef at Le Grand Restaurant in Paris) had initially planned just on serving beautiful nectars… and ended up adding some spellbinding small plates to the mix, like the ones we tasted the other night: cheeky dauphine potatoes with two dipping sauces (apricot sauce and herbed mayonnaise); marinated pepper lounging over stracciatella smoked over mezcal, served with juicy peaches and hazelnuts; half a gigantic slow-cooked tomato topped with herbs and toasted peanuts, swimming in an explosively flavorful broth of dashi and rayu (a spicy Japanese sauce); intensely fresh flame-charred sea bream dressed in a muy rico ajo blanco, with sea beans and crunchy almonds; before a perfect melon sorbet with a coffee marshmallow and toasted buckwheat. // Victoria Bout
