The story
At Iwao in Marseille, Chef Christophe Caiola channels his graphic design background into a focused approach to Japanese cooking. He opened the location just two doors down from his earlier venture, Ko-Ishi, to build a larger space that matches his ambitions. His training shows in the deliberate pacing of the counter service and the careful layering of flavors in every bowl.
The menu centers on thick egg noodles served in deeply flavored broths that arrive piping hot at the counter. Guests typically choose between a rich chicken stock infused with miso, ginger, garlic, and sesame, or a vegetarian alternative built on soy milk broth with fresh bok choy and finely sliced leeks. Both versions feature carefully prepared toppings like tender chashu slices and marinated soft-boiled eggs. This style of Japanese cuisine prioritizes broth clarity and noodle texture over elaborate garnishes.
The dining room captures the vibrant chaos of a vintage Tokyo food court through stacked wooden furniture, bright noren curtains, and framed manga art. A heavy stone arch anchors the center of the space while retro figurines line the shelves behind the counter. Visitors often pair their meal with house-made mochi ice cream or traditional fish-shaped waffle cakes filled with sweet azuki paste. This lively setup earned the venue a spot on the 2026 Le Fooding list, recognizing how well it balances casual energy with serious Japanese culinary standards.
