The story
At 10 rue de Village in Marseille, La Femme du Boucher stakes a bold claim: “Bistrot viandard!” It is a specialist in French meat cookery, offal, and house-made charcuterie, served on the spot or to take away. Chef Laëtitia Visse, trained at Ferrandi Paris and seasoned alongside Thomas Brachet at the celebrated Parisian bistro Les Arlots, opened her own address here in the summer of 2020. Her mission: to revive the French butchery and charcuterie tradition that she discovered and loved in the capital.
Visse’s background is anything but conventional. After a literary baccalaureate and a childhood steeped in baroque music and travel, she found her calling in the robust, unpretentious side of French cuisine — what she calls “nourritures canailles.” She brings this sensibility to every dish, from the saucisses, caillettes, and other cochonnailles she learned to make by hand to the carefully sourced cuts of meat that anchor the menu.
The restaurant’s style is direct: a counter-dining option, air conditioning, and a focus on dinner service (Monday, Thursday, and Friday evenings, plus lunch Monday through Friday). The atmosphere is that of a convivial, no-fuss bistro where the cooking speaks for itself. The Michelin guide has recognised La Femme du Boucher with a Recommended rating, a nod to the precision and character of Visse’s work.
In a city known for its seafood, La Femme du Boucher stands out by championing the craft of the butcher and the charcutier — a welcome, meat-forward counterpoint to the Marseille dining scene.
