The story
Le Saint Esprit establishes a dedicated bistro presence in Marseille after siblings Joséphine and Louis Rohrer expanded their culinary operations from the neighborhood snack bar Aux Deux Moulins. Recognized by Le Fooding for their consistent execution, the founders relocated into the oldest bakery in Le Panier and placed chef Javier Meneses at the helm following his time at Anema. The team treats fermentation and preservation as structural elements rather than fleeting techniques. Small plate service allows the kitchen to rotate seasonal produce without heavy menu commitments.
Raw cuttlefish rests in clarified tomato water alongside house chili oil and fresh shiso leaves sourced from regional growers. Hay-smoked bluefin tuna crudo arrives with lacto-fermented apricot concentrate, habanero fragments, and purslane leaves. Tuna belly slices pair with smoked cherries and tangy goat cheese curds while trimmed haricots verts provide a crisp texture. The dessert course balances sharp acidity against rich foundations through hibiscus-sumac granita poured over goat milk ice cream or chocolate mousse layered with marigold cream and pickled green peppercorns.
