The story
Livingston introduces a fresh take on modern Mediterranean cuisine in Marseille, opening its doors on Rue Crudère in June 2021. Founders Laura Vidal, Julia Mitton, and Harry Cummins launched the project after managing Le Chardon and La Mercerie, designing the concept around Richard Bach’s seagull novel to prioritize creative freedom. Valentin Raffali helmed the initial service before departing for television, establishing a residency model that keeps the menu constantly evolving. Mads Christensen steps into the permanent role this summer, merging his Danish training with a lifelong appreciation for Southeast Asian spices.
Guests typically navigate a three-course tasting priced at €48, reflecting the kitchen’s dedication to seasonal Marseille cooking. The wood-fired grill turns out binchotan smoked pizzettas topped with creamy stracciatella and dried oregano. Chicken thighs arrive prepared tandoori style alongside calf head croquettes finished with chipotle mayo. A dedicated cellar highlights orange wines, showcasing white grapes vinified with red techniques for complex pours.
The building presents a graffiti-covered exterior where bright neon lettering spells out the venue name above the entrance. Inside, the layout embraces an unpretentious philosophy that mirrors the founders’ commitment to accessible hospitality. Classic bistro tables and Baumann chairs fill the room alongside framed film posters. This relaxed setting encourages quiet conversation while the evolving regional kitchen continues to draw local attention.
