The Founders and the Kitchen

Pétrin Couchette in Marseille defines the modern bakery and café landscape. Founders Julia Mitton, Harry Cummins, and Laura Vidal brought head baker Lizzie and senior baker Paolo into the space in April 2022. They operate next to their previous venues, focusing on long fermentation doughs and organic French grains. The kitchen runs behind a large yellow counter where guests watch mixers turn and ovens bake. This transparent setup prioritizes traditional methods over quick industrial processes.

Breads and Seasonal Plates

Their menu skips standard baguettes in favor of peasant wheats and natural starters. Regular rotations include khorasan, petit épeautre, and a rice buckwheat blend that stays fresh through extended proofing. Sandwiches change with the calendar while keeping an egg mayo recipe from opening day. Summer brings a BLT paired with house-made César dressing, and autumn shifts toward roasted pumpkin with Jura cheese and a fermented chili sauce. These plates pair well with their weekly rotating specialty coffees sourced directly from Amsterdam roasters.

Light and Terrace Dining

Customers place orders at the main bar before waiting for their names to be called across the room. A north-facing terrace holds roughly sixty seats and catches bright afternoon light throughout Marseille’s sunny season. The architecture features exposed rafters and a simple tiled workspace that keeps the focus on daily production. The clear focus on honest ingredients and steady workflow recently secured their place on the 2026 Le Fooding list.

This Marseille-based trio is always a few steps ahead of everybody else! Right near their restaurant La Mercerie , Laura Vidal, Julia Mitton and Harry Cummins (who also run Livingston and Chardon ) have set up a café/bakery where you’ll want to move right in – a wooden facade, a raftered ceiling, a tiled yellow counter…. In space with a bread oven and dough kneader, Basile Milou (ex-Mercerie) and his talented team send out crazy breads and loaves made with natural sourdough starters and heirloom wheats. Displayed in the window case: an Arles pork and kimchi sandwich made on two slices of ciabatta; a cheeky ham-cheese-mustard seed toastie; tasty focaccia topped with onions, potatoes and Parmesan… Not to mention the sausage roll (€4) that’ll have you rolling around in delight. And for something sweet? There’s lemon cake with icing and a very chocolatey brownie made with chocolate from La Baleine à Cabosse, which pairs nicely with a specialty coffee on the terrace (which gets plenty of sun in the afternoon!), before leaving with a loaf of spelt wheat bread or some delicious white bread in hand. // Juliette Mallat
