The Kitchen and Its Founders

Suffren brings a grounded approach to French bistro cooking to the sixth arrondissement of Marseille. Chefs Paul Vincent and Adrien Tran moved here after building their reputation at Chaleur Tournante near the Citadelle. Their commitment to straightforward preparation earned a listing in the 2026 Le Fooding guide. The open kitchen treats weekday service with the same care reserved for a traditional Sunday roast.

Seasonal Plates and Simple Techniques

The menu highlights ingredients that shine when handled properly. A whole sausage baked inside golden brioche arrives glazed with a deep meat jus. Pollack dressed in a bright lemon butter sauce accompanies mixed seasonal vegetables during warmer months. The kitchen finishes meals with a chocolate peanut pudding brushed with olive oil and finished with fleur de sel.

Light and Brickwork in the Dining Room

Architect Véronique Vincent transformed the former Les Trois Coups space into a room that balances warmth with clean lines. Brick red banquettes line the walls beneath a long linear light fixture that cuts across the ceiling. Guests can extend their meal onto the large terrace overlooking Place Edmond Rostand. This setup supports the relaxed pace of modern French bistro dining while keeping the focus squarely on the food.

Not satisfied with simply dolling out napkins and forks at the Citadelle de Marseille, culinary dervishes Paul Vincent and Adrien Tran (Chaleur Tournante) are now whirling about the former restaurant Les Trois Coups. Tastefully refurbished by talented architect Véronique Vincent, their new space now boasts brick-red banquette seating, a long neon light running along the ceiling and a sprawling terrace that spills out onto Place Edmond-Rostand – the perfect spot for a taste of their bistro cooking, lovingly prepared like a good old-fashioned Sunday roast. The night we went, Paul sent out all of the following from the open kitchen: saucisson brioché (whole sausage baked inside brioche) glazed in a rich jus de viande ; cheeky white asparagus draped in a voluptuous wild garlic mousseline ; before a celeriac cordon bleu that would make the original version blush, paired with oyster mushrooms and braised chicory – or a more classic pollack dressed in lemony beurre blanc sauce and served with mixed spring vegetables. And to round out the meal, there was chocolate-peanut pudding drizzled with olive oil and a pinch of fleur de sel. · Maude Zarella
