The story
In the quiet village of Martres-Tolosane, Maison Castet occupies a house where four generations have lived and worked. Chef Florent Cluzel, who brings twenty years of experience—including five years alongside Gilles Goujon and nine with Michel Trama—has made this building his own. He has brought refinement and a modern touch to the old stone walls, creating a dining room that feels both elegant and welcoming.
The kitchen is driven by local produce and the rhythm of the seasons. Cluzel’s cooking is creative and artistic, aiming to please both the eye and the palate. The restaurant offers two main tasting journeys: the five-service “Retour de marché” at 57€, and the more extensive seven-service “Voyage épicurien” at 89€. During weekday lunches, a separate à la carte menu is also available.
The dining room is led by Andreea Grigore, a young chef de salle who started as an apprentice at Maison Castet in 2016 and rose through the ranks by 2020. The wine program is in the hands of sommelier Baptiste Fortier-Quantin, whose work earned the restaurant a spot in the Top 100 of France’s best wine lists in 2022, as well as the Prix Lucien Vanel for the valorization of South-West wines that same year. The wine list itself is a destination, and the restaurant has been awarded the Michelin Recommended distinction for 2026—a quiet nod to the consistent quality on offer.
The atmosphere is one of calm professionalism. Outside, there is terrace seating for warm months. The food is rooted in the South-West of France, but Cluzel’s technique lifts it into something personal and precise. Press and guides have described the experience as “beautiful to see and good to eat,” and a “big crush” on an address that delivers far more than its village setting might suggest.
