Seasonal modern cuisine in a legendary Corrèze garden setting, recommended by the Michelin Guide.

The story

Les Jardins Sothys – Modern Cuisine & Michelin Recognition in Mauriac, France

On the edge of the Corrèze countryside in Auriac, near Mauriac, Les Jardins Sothys is a destination that blends beauty, nature, and gastronomy. The restaurant sits within the acclaimed Jardins Sothys, an “écrin vert” envisioned by Bernard Mas, founder of the Sothys group. The restaurant itself is open for the 20th season in 2026, welcoming guests from late April through early October at the heart of a landscape designed for relaxation and harmony.

The kitchen is led by a chef whose modern cuisine draws on “accents voyageurs”—travel-inspired notes— while remaining anchored in the authentic flavors of the local terroir. The result is a fresh, seasonal style that feels both rooted and exploratory. The Michelin Guide recommends Les Jardins Sothys, recognizing a kitchen that expresses its region with skill and clarity.

The dining room and outdoor seating allow guests to linger in a setting that the founder describes as a place where “the senses take root.” The gardens themselves are labeled Remarkable Garden by the French Ministry of Culture, and the broader estate includes a wellness “bulle de soin” and a boutique.

This is modern cuisine served with a sense of place. Whether you visit for lunch, for a dinner on the terrace, or as part of a longer stay, the restaurant aligns the philosophy of Sothys—beauty, aesthetics, and well-being—with the honest pleasure of eating well.
