The story
At the heart of the Domaine de Manville, a 100-hectare estate in Les Baux-de-Provence, L'Aupiho is the restaurant where Chef Lieven Van Aken expresses his singular vision of modern cuisine. The restaurant holds a Michelin star, a recognition of the high-quality cooking that unfolds here, where every plate is a deliberate composition of harmony and generosity.
Chef Van Aken, originally from Antwerp, Belgium, honed his craft alongside Michelin-starred chefs Lionel Rigolet, Michel Guerard, and Olivier Brulard. Though deeply marked by this classic training, his cooking is now wholly infused with the spirit of Provence. His menu is a constant dialogue with the land: the organic vegetables from the Domaine’s own permaculture garden travel just a few steps to the kitchen, forming the backbone of a celebrated vegetable-focused carte.
This commitment to the living world extends beyond the garden. The chef works in close concert with local producers who share his values—from the catch at the Criée du Grau du Roi to the pork from Mont Ventoux. The result is a “green gastronomy” that is both simple and rare, where the product is honored above all else. To dine at L'Aupiho is to taste the essence of the Alpilles, translated through the lens of a chef who questions harmony and invents unexpected accords, leaving the trace of a dish that is both stunning and sincere.
