Maison Drouot in Maussane-les-Alpilles serves contemporary Mediterranean cuisine that balances southern tradition with modern technique. Founders Claire and Julien Drouot relocated here in 2017 after working across Marseille and San Francisco. Their steady execution earned placement on the Le Fooding index, following an earlier award for the best sophisticated bistro in 2019.

Signature plates and seasonal pairings

Julien structures his set menus around precise textures and carefully sourced ingredients. Starters often feature a plump seaweed beignet. The plate pairs puffed rice crackers with a seasoned taramasalata before moving to main courses built around inventive formats like a pan bagnat filled with crisp vegetable brunoise and a tuna anchovy mousse. Other selections include a delicate ravioli holding a calamari squid ink and chorizo ragù, or sea bream arriving on a basil espuma alongside a summer vegetable terrine. Claire handles the sweets with a tomato raspberry sorbet and a dulce de leche mousse hiding blackberries beneath.

After Marseille, San Francisco and Saint-Rémy-de-Provence, Claire et Julien Drouot settled down with their suitcases, pots and pans in Mausanne-les-Apilles in 2017. In a space with orange walls, tables with brass legs and crushed velvet armchairs, they continue pampering locals and lucky passersby with aesthetically pleasing dishes made with local ingredients. The evening we went, Julien’s set menu featured: a plump seaweed beignet with puffed rice crackers and a well-seasoned taramasalata as a prelude; a stunning pan bagnat filled with a crisp vegetable brunoise, brought together by a tuna and anchovy mousse; an earthy calamari, squid ink and chorizo ragù nestled in a delicate ravioli; a opaline sea bream fillet in a basil espuma, served with a summer vegetable terrine; before the outstanding desserts made by Claire – an intrepid tomato-raspberry sorbet with a vinegary twist, then blackberries hidden underneath a delicate dulce de leche mousse.
