The story
At the restaurant du Côté des Olivades, Chef Nancy Bourguignon crafts a Provençal cuisine that is, in her own words, "simple, light, and refined." Her philosophy is one of genuine, unpretentious cooking—a direct reflection of the restaurant’s setting in a century-old olive grove at the foot of the Baux-de-Provence. The kitchen is driven by the daily market, with a menu or slate that changes to reflect what is freshest.
Bourguignon works closely with a network of small local producers who provide her with the best of the region: meat from the Alpilles, rod-caught fish, and vegetables from Provence. Her approach lets each ingredient speak, whether slow-cooked or simply boiled to preserve its freshness. Dishes are finished with the finest local olive oil, such as that from Moulin de Castelas, her personal favourite. The result is a cuisine that values flavour over showmanship.
The restaurant itself is part of the charming 4-star hotel du Côté des Olivades, a family-run property opened in 1998 by André and Nancy Bourguignon. The dining room and terrace overlook the landscaped park and the Alpilles, offering a setting of quiet Provençal elegance. The restaurant is open for lunch and dinner, and its quality has been recognised by the Michelin guide, which includes it in its selection of recommended addresses.
For those seeking a true taste of Provence, Nancy Bourguignon’s table offers an honest, seasonal experience rooted in the land and its producers.
