The kitchen presents two tasting menus: the Menu Lanterne (four services) and the more extensive Menu Dégustation (five services), both built around a choice of refined dishes. Starters might include pan-seared foie gras with courgette in varied textures and basil oil, or a fine Parmesan tart with white asparagus, snails, and wild garlic. Main courses showcase the season’s best, such as line-caught fish with green asparagus and morels in tarragon, or a whole lobster served two ways—the tail quickly seared with homemade saffron tagliatelle and rouille espuma, the claws as lobster rolls. Other options include a free-range chicken supreme with petits pois à la française, potato gnocchi, and spring onions, or a French veal sweetbread, golden in the pan, with the same spring accompaniments. A cheese course is available as an addition.
Desserts maintain the same precision, like a chocolate and coffee feuille à feuille with passion fruit gel, or rhubarb confit with hibiscus, a Breton sablé, and rhubarb sorbet.
