La Réserve takes its name from the royal food storehouse built in 1559 within Metz’s Citadelle. More than 500 years later, the stone vaults of Jaumont limestone still shelter the dining room, now home to chef Guillaume Hieulle’s kitchen. The ambition, as director Alexis Millet puts it, is simple: make La Réserve a genuine meeting place for the city, open to all.

The team champions a cuisine that is sincere, local, seasonal, and made from scratch. They have shortened the menu to let the produce speak, adjusted prices, and forged closer ties with producers in Moselle and the Grand Est region. The result is Modern Cuisine that feels grounded and generous – not showy, but deeply satisfying.

The restaurant’s effort has been noticed. La Réserve is listed in the Michelin Guide France, a recognition that aligns with its commitment to honest cooking and warm hospitality.

From breakfast to dinner, one place for all

La Réserve adapts to different rhythms throughout the day. There is a buffet breakfast with homemade and local products, an express lunch in 60 minutes (main course at €22, or a formule including pastry or gourmet coffee at €29), tea time with pastries and Lorraine crémant, an afterwork with sharing boards, and dinner with a main course at €26 or a three-course menu at €49. The kitchen also caters to vegetarians and children, ensuring everyone feels welcome.

The seasonal carte du jour features dishes such as grilled sea bream fillet with brown butter and spring vegetable fricassée, or a perfectly poached egg with asparagus, Parmesan cream, and farm ham. Desserts like the lemon meringue with poppy seed ganache and rosemary sorbet, or the spring strawberry with burrata and balsamic, show a refined pastry hand.

A setting full of energy

Dining at La Réserve means sitting under the arched stone ceilings of a former army storehouse, on a terrace overlooking the Palais du Gouverneur, or at a table in the bar Le 1559. The energy of the vaulted space, the light from the tall windows, and the attentive service make it a place where a meal feels like a real pause – not a production.

As Millet says: “We don’t promise to impress you, simply to share a truly good moment in this place full of energy.”
