A new chapter with the Fabuel family

The kitchen is now led by chef Paul Fabuel, who carries forward the legacy of the talented chefs who came before him. In the dining room, his wife Elise Fabuel sets the tone with attentive, unhurried hospitality. Together, they bring a sense of continuity and fresh energy to this address. The restaurant’s commitment to quality has been recognised by the Michelin guide, which lists it among the Recommended establishments—a quiet nod to the precision and care found on every plate.

Menus built around the seasons

The cooking is firmly rooted in modern cuisine, with a strong seasonal rhythm. The “Menu Plaisir” (€58) opens with a trilogy of white and green asparagus, prepared with a zero-waste approach: a subtle mayonnaise with dill, grapefruit pearls and champagne foam; a crunchy cone filled with fine asparagus brunoise and fresh goat cheese; and a chilled grilled asparagus gazpacho. It can also begin with a terrine of foie gras from the Sud-Ouest, paired with strawberries, black olives from Nice, and toasted brioche. Mains include seared Saint-Pierre in a modern bouillabaisse with fennel confit and saffron rouille, or veal fillet, smoked then roasted, with a princess sauce and sweet potato purée.

For a more concise lunch, the “Menu Au Gré du Temps” (€38, served Wednesday to Friday) offers dishes such as cuttlefish tagliatelle with crispy guanciale and pecorino cream, followed by Aberdeen Angus picanha with mashed potato and béarnaise. A plant-based “Menu Jardin” is also available, letting vegetables and legumes take centre stage.

The dining room is elegant and comfortable, with access for those with reduced mobility. A large free car park sits just steps from the entrance, and the restaurant also offers a private salon for events. For those who wish to enjoy the food at home, a takeaway service offers curated menus, pastries, and more—all prepared with the same attention to detail.
