The story
Since October 1919, the Burnel family has welcomed guests in the Lorraine village of Rouvres-en-Xaintois, near Mirecourt. What began as a modest grocery has evolved through four generations into a refined hotel-restaurant. Today, Marion Burnel, the maîtresse de maison, and her husband, chef Maye Cissoko, carry forward the tradition of genuine hospitality. A major renovation of the dining room in spring 2024 refreshed the space, while the garden terrace—shaded by a centennial walnut tree—remains a favourite spot for an aperitif or coffee.
Maye Cissoko leads the kitchen with a philosophy of audacity and precision. His cooking reinterprets French classics, bringing clarity and depth to every plate. The Michelin guide awarded a star for this high-quality cooking, recognising the balance between tradition and modern technique. The result is a menu that draws on the produce of the region but lets the chef’s personality shine. The restaurant occupies a handsome country house with a large, enclosed garden. Inside, the dining room is light and contemporary, with a veranda that opens onto the greenery.
