The story
At La Table Mirasol, the dining experience begins with the ingredient. Chef Philippe Lagraula builds his menus around a meticulous selection of local products, letting each encounter spark a personal dictionary of flavours. His cooking is intuitive, blending modernity with a deep respect for the dishes of the Landes terroir. This is modern cuisine that surprises: chipirons from Capbreton might meet cornichons, raspberries, and petits pois. The challenge is balance – the charred notes of the squid and pickle, the acidity of raspberry, the sweetness of pea, all while harmonising textures from crisp to tender. The chef also plays with contrasts of nervosity and smoothness, introducing citrus alongside meats. Every plate is a carefully orchestrated composition, designed to magnify exceptional produce.
The restaurant occupies two adjoining salons, creating a hushed and private atmosphere for lunch or dinner. Underfoot, an extraordinary monumental carpet designed by architect Benoît Dupuis and woven in a traditional workshop adds a kinetic energy that echoes the movement of the dramatic sculpture of Diana and Actaeon, whose figures seem to shift as you pass. The architect’s guiding principles were sobriety and elegance – soft colours, restrained lines, all directing attention to the rigorous assembly and presentation of each dish. It is a setting that complements the food without competing with it.
Chef Lagraula’s cuisine is anchored in the seasons and the bounty of the surrounding region. The menu evolves without pause, driven by what the land and sea offer.
