The story
At Villa Mirasol, the Bistrot 1912 offers a convivial take on seasonal cuisine. The menu changes with the market, featuring generous, sharing-friendly dishes that balance comfort with surprise. The chef brings subtle South American touches to the table, such as a ceviche of wild prawns with sweet potato, Landes sweet corn, lime, fresh coriander, and a watermelon broth. Another standout is the Ibaiama pork chop from the Basque Country, cooked on the plancha and served with girolles, sautéed green beans, and a delicate pork jus. Each plate is presented with a vivid, painterly aesthetic.
The setting is as considered as the food. Benoît Dupuis designed the furniture, with seating crafted by local artisan La Chaiserie Landaise, preserving an ancestral woodworking technique. Guests can dine in one of the two indoor salons or on the shaded terraces overlooking the botanical garden. The sound of flowing water and the lush greenery create a genuinely relaxing atmosphere.
This commitment to quality and value has earned Bistrot 1912 a Michelin Bib Gourmand, recognising its good-quality, good-value cooking. Whether for lunch or dinner, it is a place where the food and the surroundings invite you to linger.
