The story
In the heart of Montaigu, La Robe sits on the edge of the old town’s moat, its dining room opening onto flower beds that echo the chef’s creative, vegetable-driven cooking. The interior is deliberately cosy—comfortable, natural, relaxed—while an outdoor pergola extends the experience into the warmer months.
Chef Xavier Giraudet trained in the brigades of several multi-starred Parisian chefs before taking the reins at La Robe. His cuisine aims to magnify products through precise cooking and subtle accompaniments, with reductions that reveal every layer of flavour. The Michelin star, first awarded in 2017 and renewed in the 2026 guide, confirms the rigour of that approach.
Giraudet cultivates his own garden and works with nearby producers who share his attention to quality. The result is what he calls “un goût de dingue”—a crazy good taste—that surprises guests with the intensity of local ingredients: honey, truffles, asparagus, pigeons, ducks, and pork from the Vendée, alongside seasonal seafood like turbot, skate, tuna, and lobster.
The modern cuisine on the menu changes with the seasons, and the chef’s commitment to proximity extends to vegetarian dishes that appear on both La Robe’s gastronomic carte and the more casual bistro menu at L’Atelier, housed in a converted agricultural workshop just steps away.
A private salon seats eight for an intimate gastronomic dinner, while a larger room accommodates up to sixteen guests for corporate or family events. Sommelier Alexis has built a cellar that spans classic appellations and lesser-known terroirs, with a carefully rotated selection by the glass.
