The story
Set along the Tardoire river minutes from the centre of Montbron, Moulin de la Tardoire occupies a former mill surrounded by greenery. The sound of running water accompanies every meal in an atmosphere the restaurant itself describes as “chic et décontracté.”
At the stoves is Chef Matthieu Brudo, whose career includes stints at prestigious addresses like Jules Verne in Paris, Château de Nieuil, and Bastide Saint Antoine in Grasse. His approach is straightforward: “Cuisine de cœur, inspirée par les produits et les saisons” – cooking from the heart, driven by ingredients and the calendar. The result is modern cuisine that feels both precise and generous.
Moulin de la Tardoire offers several menus, starting at €29.50 and reaching up to €95 for the full inspiration and dégustation experience. A typical sequence might begin with an amuse, then move through an entrée, a fish or meat course, cheese, dessert, and coffee. The kitchen builds each dish around the best of what is available, whether that is a Gillardeau oyster with snails from Adriers and glazed onions, or a roast leek with confit egg yolk and Parmesan crumble.
Main courses showcase local and coastal sourcing. A “retour de pêche” features fish from Captain Benoit Lavaud in Royan, served with braised celeriac mousseline and a jus bound with Cognac. Another signature is the Rouzède guinea fowl, with a fondant supreme and a leg médaillon, paired with a carrot from Jarnac-Champagne and a jus made from the cooking fat.
Pastry is led by Matthieu himself. Desserts include a creamy guanaja chocolate ring with lightly smoked crème anglaise and Caribbean dark chocolate sorbet, or a vol-au-vent of inverted puff pastry with Piégut strawberry tartare, Madagascar vanilla mousseline, and strawberry sorbet. Rhubarb appears three ways: almond crumble, compote, and pickles, with raspberry sorbet.
Wine pairings are available, and the cheese plate comes from affineur From Terroir in Augignac.
Moulin de la Tardoire holds one Michelin star, a recognition of its high-quality cooking.
