Bistrot Constant sits on the small port of Montech, in a former lock-keeper's house that has been transformed into a contemporary, light-filled space. In winter, the fireplace crackles; in all seasons, the calm of the countryside and the reflection of majestic plane trees in the water set the scene. Chef Christophe Marque

Chef Christophe Marque, together with his wife Virginie, has been running Bistrot Constant since 2014. Both are from the southwest of France. Christophe trained under highly respected chefs: Christian Constant, Jean-Marie Gautier, and Antoine Westermann. Those years instilled in him a taste for meticulous work. Passionate and rigorous, he pays close attention to product quality and seasonality, precise cooking, and delicate flavor combinations. His curiosity and sensitivity subtly enrich his creations.

The Menu

While the menu changes with the seasons, a sample from a recent truffle menu gives a sense of the chef's style: a croque monsieur with truffle, a crispy soft-boiled egg with smoked eel and Parmesan cream, roasted sea bass with winter vegetables and Périgueux sauce, crispy veal sweetbreads with truffled macaroni gratin, and a chocolate ganache with peanut ice cream and truffle. Each dish balances generosity with elegance.

Pau-native Christophe Marque has certainly made his mark on this old lockhouse along the Canal des Deux-Mers, which was done up in 2014 (waxed hardwood floors, big windows, a massive terrace) when chef Christian Constant initially took it over. The day we went for lunch, the former chef of Le Bibent in Toulouse delivered a flawless €23 menu: voluptuous vitello tonnato with a coco de Paimpol bean hummus, pickled red onion, sorrel and capers; irreproachable pan-fried wrasse fillet, perked up with a bouillabaisse-style broth with mussels, onions, new potatoes, zucchini and peppers; before an outstanding Mirabelle plum clafoutis served with marigold ice cream. Otherwise, served à la carte there’s meagre, oyster, salmon and ginger tartare; spit-roasted chicken with mashed potatoes and an herb butter; chocolate tart, etc. // P.L.
