At the heart of Domaine du Colombier

Le Colombier is the gastronomic restaurant of the Domaine du Colombier, a 14th-century bastide set in a 4-hectare park of centenary olive trees near Monté́limar. Under Chef Directeur Johan Thyriot, the restaurant received a Michelin star in 2026, recognised for a cuisine that translates the region’s landscape into precise, seasonal plates.

Four elements, one kitchen

Thyriot’s cooking is organised around the four elements — Fire, Water, Earth, Air — and draws subtle inspiration from Japanese Kaiseki. The menu changes with the seasons, drawing almost entirely from the estate’s own ecosystem: a permaculture potager, a 450 m² aromatic herb garden, 400 olive trees in organic conversion, and 30 beehives that produce a thyme-and-lavender honey. The result is a modern cuisine that feels grounded and immediate.

The spring 2025 menu, for instance, opens with a luminous Petit pois – Kiwi – Géranium – Sil Timur, and moves through an Omble du Canada prepared using the Ikejime method, to a Pintade with fresh herbs, vanilla, and green Sichuan pepper. Vegetables are treated with the same attention as the main protein: an Artichauts – Koji – Noisette – Sureau dish highlights fermentation, while Asperge – Gingembre – Tanaisie keeps asparagus as the star. Desserts like Fraise – Basilic – Huile d’olive du Domaine – Baies de Malam close the meal with a direct taste of the estate.

An ecosystem in the plate

What makes Le Colombier distinctive is how completely the kitchen is fed by its surroundings. The domaine also runs a biodynamic vineyard, Les Amoureuses, whose wines are served and sold on-site. This circular model — from soil to table — is central to Thyriot’s approach, and it’s one of the reasons the restaurant also holds 3 macarons from Écotable and 16/20 from Gault & Millau.

Dining here feels like a slow conversation between the chef and the land, served under stone vaults in a place that has welcomed travellers for centuries.
