The story
Folia introduces market-driven French cuisine to Montpellier under the direction of chef Léa Roque. The kitchen originated from a partnership between founding chef Thierry Alix and domain owners Pierre and Marie de Colbert. Roque maintains that original philosophy through a menu that adjusts daily according to regional harvests. The We’re Smart Green Guide acknowledged this approach with a one radish rating last year.
This fresh seasonal menu relies on ingredients harvested directly from the Château de Flaugergues estate. Kitchens pull aromatic herbs and edible flowers from the property garden alongside local vegetables. Guests pair each course with bottles drawn from the domain’s own cellar. The wine list rotates continuously to complement the shifting plates.
Dining rooms feature venerable stone walls that physically support the upper garden terraces. Natural light fills the main hall during weekday lunch service while patrons gather on the outdoor terrace overlooking the historic mas courtyard. The flexible floor plan accommodates both intimate meals and private group bookings.
