The story
On the lively Place de la Canourgue, La Canourgue brings the Pourcel brothers' signature "bistronomie" to life. The concept is simple: combine the relaxed atmosphere of a bistro with the quality and technique of fine dining. Jacques and Laurent Pourcel focus on authentic, market-driven ingredients—fresh produce from the garden and the market—prepared with sincerity and spontaneity. The result is a cuisine that is generous, seasonal, and full of flavor, without pretension. Michelin has recognised this approach with a Recommended distinction.
La Canourgue unfolds across three convivial settings. The terrace stretches along the hotel facade, facing the square’s fountain and rose garden—ideal for watching the sun and the city’s rhythm. Inside, the courtyard patio offers a light-filled retreat under a flowering glass roof, sheltered from street noise. The third space, the Élytre bar, is an intimate, sophisticated lounge named for the shimmering beetle elytra that adorn its vaulted ceiling. Whether for a working lunch, a relaxed dinner, or a cocktail, each area shares the same ethos: informal elegance.
The concept is built on freedom and freshness. The menu offers six starters, six main courses, and six desserts, changing with the seasons. Prices are straightforward: one dish at 29 euros, two dishes at 44 euros, or three at 58 euros—all including amuse-bouche and mignardises. Lunch runs from 12:00 to 14:30, dinner from 19:30 to 22:00, every day. Guests can share tapas or settle into a full meal, enjoying a cuisine that “magnifies the simplest product” without fuss. La Canourgue makes gastronomy accessible, welcoming, and distinctly southern.
