The story
Leclère takes its name from a philosophy: cuisine d’arrivage – cooking dictated by what arrives that day. Chef Guillaume builds each menu around the freshest produce, seafood, and meats sourced directly from local producers and fishermen. The result is a constantly shifting expression of modern cuisine, rooted in the seasons of the Mediterranean hinterland.
The restaurant offers two tasting formats. At lunch (Thursday through Saturday), a five-course Arrivage menu at €62 reveals the kitchen’s precision and restraint. Dinner (Tuesday through Saturday) expands to seven courses for €92, allowing deeper exploration of the chef’s technique. Each menu can be paired with a thoughtfully selected wine flight – three glasses for lunch (€35), four for dinner (€45).
The wine list, curated by sommelier Laura, is a living document. It changes frequently to mirror the menu’s spontaneity, with a strong emphasis on smaller domains and natural-leaning bottles. The dining room is calm and understated, letting the plates speak.
Leclère earned a Michelin star in 2026 for its precise, ingredient-led modern cuisine – a quiet but confident address in the heart of Montpellier.
