The story
In the historic Écusson district of Montpellier, Reflet d’Obione stands for a different kind of fine dining. Since opening in 2018, chef Laurent Cherchi and director Adèle Escafit have built a restaurant where gastronomy meets a deep commitment to health, sustainability, and terroir. Awarded a Michelin star since 2021, the restaurant is also recognized as a Table Remarquable by Gault&Millau and holds the Three Tables label from Écotable.
Chef Cherchi’s path to this philosophy is personal. A trained pastry chef and cook who worked in Michelin-starred kitchens, he discovered the link between food and well-being after his own gluten intolerance forced him to rethink his diet. This led to what he calls a "cuisine de conscience" — cooking that is both delicious and nourishing. All of his menus are gluten-free and built on a plant-based structure, with options for lacto-ovo vegetarian, vegan, or animal protein additions. Ingredients are chosen for both taste and nutritional value: local vegetables from organic, living-soil farms; French meats from free-range herds in Occitanie; and sustainably caught fish from the Mediterranean and the Gulf of Gascony. The menu changes with the seasons, reflecting the landscapes of the region — from the Larzac plateau to the Cévennes mountains, the Camargue wetlands, and the Mediterranean coast.
The "Menu Horizon" is a seven-course tasting journey that showcases this approach. Dishes like escargots from La Vaunage, courgette from the Jardins de Costebelle with lacto-fermented Burlat cherry, and trout from Ferme de Condax with broccoli and pine-smoked yogurt demonstrate the kitchen’s precision and respect for the ingredient. A dedicated "sobrelier" offers a non-alcoholic pairing of house-made infusions and beverages alongside the sommelier’s wine selection. The atmosphere in the dining room is one of quiet focus, where the pleasure of the table aligns with an awareness of the land and the body.
