The story
Under the centuries-old beams of a historic building in Réveillon, just minutes from Mortagne-au-Perche, chef Amandine Chaignot has created Sauge. It is a place of two hearts beating together: the gastronomic Table, an intimate space of about twenty seats where an eight-act tasting menu unfolds, and the lively Bistrot, a wood-and-tweed counter and dining room for around fifty guests. Here, the menu changes with the season and the whim of local arrivals. Both sides share a single philosophy: a modern, respectful expression of the Perche region’s fertile landscape.
This is not a chef parachuting in. Chaignot is a committed resident of the Perche countryside. The story began in 2022 when she discovered the former Jazz Café, the last remaining commerce in the small village of Réveillon. Convinced of its potential, she undertook a complete renovation with her brother, an architect, and was quickly joined by the entire village, which threw itself into the work. The result is a place that feels grounded, not imported.
At Sauge, the love of gastronomy begins with the product. Chaignot champions a network of local producers: organic vegetables from Une Ferme du Perche, artisanal beers from Brasserie La Vertueuse, and ciders from the family distillery Maison Ferré. The menu, whether at the Bistrot or the gastronomic Table, is a direct line to this ecosystem. This commitment to sourcing and execution has earned Sauge a place in the Michelin guide, recognized as a Recommended address for its authentic, modern cuisine.
The restaurant’s very name evokes both the herb (sage) and its exacting, clear-sighted approach. It is a subtle equilibrium between tradition and modernity—concrete, elegant, and welcoming. The entire space is available for private events, offering a tailored culinary experience. Sauge is open Thursday through Sunday for lunch and dinner, inviting guests to discover the Perche differently, one plate at a time.
