The story
In the quiet village of Hochstatt, just fifteen minutes from Mulhouse, Au Cheval Blanc has been a local landmark for generations. When chef Davy Mathis and his wife Muriel took over in 2004, they set out to transform the classic inn into something entirely their own. The result is a restaurant that balances tradition with a distinctly contemporary approach – one that earned it a Michelin Recommended distinction in 2026.
Davy Mathis, a native of Bantzenheim, trained at the École Hôtelière J.Storck in Guebwiller before honing his skills in some of Europe’s most demanding kitchens. He worked under Philippe Rochat at the three-starred À l’Hôtel de Ville in Crissier, Switzerland, and alongside Marc Haeberlin at the three-starred Auberge de l’Ill in Illhaeusern. Those years instilled a discipline and a passion for creative, precise cooking that he now brings to every plate at Au Cheval Blanc.
Mathis describes his cooking as a marriage of tradition and inventiveness. He works exclusively with fresh, seasonal products from the Alsatian terroir, choosing ingredients that are traceable and environmentally sound. The menus change with the market, and the variety of his dishes – from the Market Menu to the Duo and Découverte options – reflects a chef who values quality above all else. The restaurant occupies several modular dining rooms in the heart of Hochstatt, each adaptable for intimate dinners, family celebrations, or corporate events. In warmer months, the shaded terrace offers a peaceful setting for the chef’s creations. Since 2024, three guest rooms on the upper floor – stylishly renovated – allow guests to extend their stay. The atmosphere is both chic and warm, with a team that pays attention to every detail.
Au Cheval Blanc is open for lunch Thursday through Tuesday, and for dinner on Thursday, Friday, and Saturday. It is closed on Wednesdays. Reservations are recommended at least 48 hours in advance.
